I received this recipe from a volunteer at work. She would deliver scrumptious goodies around Christmas time to different parts of the museum.
Yummy did I say yummy, oh yes I said yummmmmy!
Cranberry Bread Recipe
1 cup of canola oil
1 cup of buttermilk
2 Eggs (eggbeaters)
2 cups of sugar
Beat until blended
Combine and add to above
3 cups of flour
1 tsp. of baking soda
1/4 tsp. of salt
Stir in by hand but you can also use a mixer
1 cup of chopped pecans
1 cup of walnuts
1 cup of pitted dates (chopped to your specialty)
2 cups of thawed cranberries (cut in half if large)
Bake in greased and floured Bundt pan at 350 degrees for 1 hour and five minutes depending on your oven until toothpick comes out clean and cool on rack for 10 minutes. Remove from pan.
Please note –The recipe calls for thawed cranberries. That’s because I always keep them in freezer so they are available all year long. I always use fresh (buy them when they are in season.
J and I tweeked this recipe because we wanted to make it healthy but tasty. Well we succeeded in doing that indeed.
My hubby and I love to make cranberry bread or banana bread so I will post soon the scrumptious recipe that’s so simple to make.
